Okay okay... so my first post was My Mom's Zucchini Bread and now I'm posting ANOTHER ZUCCHINI RECIPE. Two in a row. I'm sorry... but I'm not sorry. You know why? Oh, AND this is the first of the crop for the summer. So what better way to celebrate than by giving you my all time favorite zucchini recipe?!
I love this recipe because I've never had anything similar to it. It's unique. Mouth watering. Once cooked, it has a crispy skin, with delicious zucchini stuffing directly under it... which is cozied right next to the perfectly moist chicken breast. It's so good that you simply must try it! (And I'm sorry that the pictures just don't do this dish justice. I'm going to have to retake the next time I make it with better lighting!)
Please, trust me. It's DELICIOUS. So good that I forgot to get a picture of the finished product before we all gobbled it up. I promise I'll post more pictures when I make it again! I love to serve this with rice, and a salad.
